Seafood Dinner

This was a follow-up dinner after our kelong trip. I cooked mostly seafood for my friends tonight. Post Ocean Bay Resort dinner cum belated birthday cake cutting for two friends.

Sharing with you the food we enjoyed tonight.

For the calamari recipe I will just share it here. It was my dad who taught me how to make the batter. 3 tbsp rice flour, 1 tbsp plain flour, 2 tsp baking powder, salt and pepper (estimation), about 2 tbsp of sesame oil, cold water, mix into a batter that is not too thin or too thick. This part you will have to eyeball it with your own judgement. You can use the same batter for prawn fritters too.

I have tried the calamari recipe but not so crisy but the taste acceptable from my family. Have to eat while hot but how u manage to cook so many dish while still serve hot or warm.

wow, another round of your yummy seafood meals. For the garlic basil prawns - did you first deep -fried the prawns, then heat wok, saute garlic, add prawn, basil and quick stir under high heat?

Hi Anonymous, yes I did remove the glass plate and I used the lower rack to bake.

Hi Wai Fong, yes the prawns was deepfried first. Your steps are correct. However you need to add a bit of sauce when stirfrying.
