Ji Dan Gao

I bought this takoyaki mould for a while already. Most of the time I only use it for making takoyaki which is what the mould is for right. That day I saw a website where they use a cast iron mould to make ji dan gao. I thought why not I use my takoyaki mould to do the same. Of course if you have the cute cute bear or other shape mould the ji dan gao will look cuter but then I don't want to invest in too many gadgets and at the same time I can make better use of my takoyaki mould right. So I set out to try and see if I can do it. I am glad I tried. The ji dan gao is so soft and yummy. Hubby says it's nice too. Sharing with you my ji dan gao and the recipe.

Recipe (taken from a Taiwanese website)

4 eggs
120 gm castor sugar (I reduced to 100 gm)
140 gm cake flour
2 gm baking powder
60 gm melted butter
60 ml fresh milk

Whisk eggs and sugar until it is creamy and thick. Add in sifted flour and baking powder and mix well. Add in milk and mix well. Lastly add in melted butter and mix well.
Oil and heat the cast iron mould over your stove using small fire. Pour the batter into the mould abt 50% to 60% full. When you see bubbles on the surface of the batter, carefully use a cake tester to dig the cake out and place it on top of another cake still in the mould. Loosen and turn the cake around the mould to get an even browning on the cake. When cake is cooked remove from mould to avoid burning it.

Yes of course, you can add any filling you like.

Hi and thanks all for your kind words. In Singapore, you can find the Takoyaki mould in places like Takashimaya but it is expensive. You can try to get it from Sia Huat in Singapore, it should be cheaper there. Here is their website. http://www.siahuat.com/

I am sorry, I have no idea where you can get this mould from in KL.

Hi Lee Lee,

Its May here. My cousin sister just helped me to get the takoyaki mould from Sia Huat.

But I am not sure how to start using it. I understand that you have to oil it 5 times first before using right? How do I do that? Does it mean that I have to oil it, then wash away with water and oil it again for 5 times? And must we also grease it before keeping it?

Sorry..Really not sure how to start off using it.

Hi Sunshine23, you can try using a normal mini muffin tray and baking method if you don't have this type of mould.

Instead of using the takoyaki mould, can I steam or bake it instead? How big a pan should I use based on your recipe?
