Walnut Mooncakes

WALNUT MOONCAKE

Ingredients:
360g Plain flour
25g Custard Powder
1/2 tsp Sodium Bicarbonate
50g Icing sugar
50g Crisco shortening
220g Butter (salted)
1/2 tsp Vanilla flavour
1/2 tsp Ammonium Bicarbonate
1 Egg
Walnut for decoration

Filling:
1 kg Lotus Paste
200-250g Walnut (toasted and chop)

Methods:

1. Cream sugar, shortening, butter, vanilla flavour and ammonium together until slightly white. (slow speed first then change to high speed)
2. Gradually add in egg.
3. Lastly add in sifted flour, custard powder and sodium bicarbonate to knead into a dough. (don’t mix too long) Leave dough in fridge overnight or for a few days.
4. Take out dough from fridge and divide into portions of 30 gm each.
5. Divide fillings into about 40 gm each.
6. Wrap fillings into dough and decorate with walnut. Apply egg wash and bake at 160ºC for 10 mins. Take it out and leave it for about 10 mins and apply egg wash again. Bake for another 15 mins.

Thanks for the recipe. May I know what is the purpose for adding ammonium bicarbonate and can it be omitted?

Is sodium bicarbonate - Baking soda? What is Ammonium Bicarbonate?

Yes sodium bicarbonate is baking soda. Ammonium bicarbonate is use as a kind of raising agent. If you do not have you can omit it.

Hi Li Leng, the result won't be changed much. You can eat the walnut mooncake after it has cooled down.

For the eggwash, use 1 egg yolk plus 1 tsp of water.

No the walnut outside for deco I did not bake it first.

Hi Leelee,

I just tried the recipe the pastry is nice and fragrant. But it is a little "crumbly". Is it supposed to be like that?

Also, I felt that the pastry was a little salty, is it also meant to be like that?

Shim, you can add melon seed. Toast it at 180C for 10 mins and leave it to cool down then add to the paste.

Youfei, the crust is crumbly type and if you find the crust too salty, you can cut down on the salt by using unsalted butter and then just add 1/2 tsp of salt to your mixture. But I find that the salty crust compliments with the sweet lotus paste.

thanks for the prompt reply! Actually I too felt that the salty skin is nice in balacning out the sweetness. But my brother and sister commented that it is a little salty, which made me think twice if i had done the recipe correctly =p thanks for the alternative! =D

The crust of this mooncake is supposed to be quite crumbly. Maybe you want to add more flour or reduce the butter.
