Getok

This is actually mashed tapioca topped with freshly grated coconut mixed with orange colour sugar. Actually I had wanted to make some steamed grated tapioca coated with coconut but then no enough tapioca so last minute change my mind and made this.

Ingredients

1200 gm of tapioca (w/o skin)
3 tsp salt
300 gm shredded coconut
250 gm orange sugar
80 gm cooked plain flour (fry 100 gm of plain and then sift out 80 gm)

Method

1. Add 1 tsp of salt into water. Boil tapioca in water for about half an hour.
2. Mash tapioca and add in 2 tsp of salt and mix well. Line a 8 x 8 square tin with plastic. Pour mashed tapioca into it and press it evenly.
3. Fry coconut shreds with red sugar for about 5 minutes. Then add in cooked plain flour and mix well.
4. Press orange coconut shred on top of the tapioca evenly. Leave it to cool before serving.
