Spritz Cookies

I have been asked to provide this recipe by some of my readers. For the sake of those who wants to know some step by step method of making this cookies, I have taken some pictures along the way while I was making it so that you will have a clearer picture. This recipe is actually better if you use the cookie gun and for the purpose of those of you who would like to make it using a cookie cutter instead, I have provided two options for you to choose. Option 2 will yield a drier cookie but still good. Cut down on the sugar if you like or if you are going to decorate them with royal icing. If you have rolled the dough to be thicker then remember to bake it longer like maybe for 20 mins instead of 15 mins. Remember to keep it in airtight container to retain crispyness.

Ingredients:
Soften butter 250g
Castor or fine sugar 200g
2 eggs
2 tsp vanilla essence
3 cups(390g) plain flour + 1/2 tsp baking powder (option 1)
5 cups (650g) plain flour + 3/4 tsp baking powder(option 2)
1/4 tsp salt

Methods:

Cream butter and sugar until creamy. Add in eggs one at a time and mix well.



Add in sifted flour and baking powder and salt. Mix well until like this.
This is how the mixture look like for Option 1 amount of flour. This consistency is good if you want to use a cookie gun or a piping bag.


If you want to roll our dough and use cookie cutters, then use the amount of flour in Option 2. This is how the mixture look like after adding two more cups of flour and 1/4 tsp of baking powder.



Roll dough out between two pieces of baking or parchment paper.



Cut dough using cookie cutters of your choice. Bake at a preheated oven at 190C for about 15 mins or until cookie is brown.



After baking.



Simple decoration.


Decoration using royal icing and I wrapped them individually and seal it with a sealer.


Ready to be given away for Christmas.

I have a question on measurement. What is the correct way to measure flour using cup ? Do I compress the flour, ie. "bang" the cup so that the flour will be compressed or do I just pour the flour loosely ?

Mysweetkitchen, I bought the snowman and Christmas tree cutter from Perth last year when I was there for holiday. The other two are bought for me by my hubby. He bought the 100 pcs cookie cutter from the US.

Mizz, don't bang when measuring flour. Just fill up the cup up to the brim and use a knife to scrap off excess on top to measure one cup. Usually it is between 125g to 130g. If you bang the measuring cup, the flour will be too compact and the measurement will be off.

Hi, I've been following yr blog for sometimes and was really envy on all yrr baking. I would like to ask how long does it take the icing to dry? Will the cookies turn soft by the time the icing get dry?

Yes, you have to let the cookies cool down before icing. Keep it in an airtight container and take out one at a time to ice it.

Ann, the icing dries up quite fast. I think it takes less than 30 mins.

I baked this last nite as soon as I got home from work. But I was sorry I only made half the batch of option 2. Definitely go for the full batch for twice the fun.

Hi Natasya, I made the whole recipe but maybe still not enough. My younger son has been stealing it from my box and it is getting lesser by the day. I intended to give to my colleague later this week but decided against it as I may not see them by Friday. So this moring, I distributed them out to my colleagues already. Hahaha

Check w u if the cookie dough i can't finsh baking can keep in the fridge for next day? I try your steam choc cake last Sun my kids love its alot. But my choc ganache is more watery. Do i have to add more choc?

Hi Shirley, yes you can keep the dough in the fridge for the next day. For the choco ganache, you can either add more chocolate or use lesser cream.

Hi Dolphin, I sifted some icing sugar into a big bowl, added in some lemon juice and stir. Kept adding lemon juice until the consistency I want. You can use a mixture of lemon juice and water if you like. For me I don't want a super sweet icing so I use all lemon juice.

the cookies are a hit with my kids! They loved it. I changed the butter to margarine and the dough still came out manageable with the cookie cutters (need to do this because my son is allergic to cow's milk).
