Tonight we had a PSG appreciation dinner at my son's school. This was the last PSG meeting with the present principal, Dr Ong. Dr Ong has been seconded to NIE and will be leaving the school by end of this year. To show appreciation to Dr Ong, I have represented the PSG to bake a cake as a farewell gift to him. I did a steamed moist chocolate cake with chocolate ganache covered with MM fondant into the shape of a shirt. I had originally wanted to make a tie to go with the shirt but I didn't have enough time. So in the end I just added buttons to the shirt which is faster and easier. I was glad that everyone enjoyed the cake.

Cos I have tried this with ganache, leave in the fridge and the cake turn out to be very hard.

You fondant cakes are really pretty. Would you like to recommend me to the place where you learned the cake deco skills?
I did the cake on Monday night. Left it in the fridge overnight. Then on Tuesday night, I did the ganache and fondant. Then assemble the cake and after the cake was done, I left it outside until we need it on Wednesday night. Usually it is not advisable to leave fondant covered cake in the fridge for the fear of the cake 'sweating'.
But if your cake is just covered with chocolate ganache it is ok to leave it in the fridge. Before eating, take it out and let it thaw at room temp for at least an hour.
FYI, this steamed moist chocolate cake will remain soft even though it has been refrigerated.

I dont know if my message went through. I used butter and some oil. Is it the butter problem? Oil shouldnt harden the cake right?

Hi Jaslyn, I guess your early message didn't go through. If you use butter the cake will harden in the fridge but if you use oil it will not. Maybe that is the reason why.

Somebody was asking about learning deco skills. Actually there are many places that are offering cakes deco classes like BIY, Creative Culinaire, Phoon Huat, etc etc. For me, I have only attended advance cake deco (piping) lessons at Creative Culinaire. I find it very good. I learned my fondant through friends and website though.
