Strawberry Marshmallow Cake

One of my colleague is leaving us this Friday. He has requested for a cake from me and I have a few ideas of what cake to make for him. In the end, since I have a box of strawberries sitting in the fridge and needs to be used soon, I have opted to make the strawberry marshmallow cake. I managed a big cake plus two small mini size heartshape cakes.

Also wanted to share with you my cute little Tupperware container that a good friend of mine gave me for mooncake festival. This is a limited edition from Tupperware for this mooncake season. It comes with two containers and two pieces of mooncake. I love the colour and how handy and cute they look.

Lee Lee, this is awesome...I have just make the cake too..yours is so nicely presented. I make mine in normal container..where do u get this nice flower shape and how do u managed to get the cake out of the container..Fantastic!

EK, I got the flower cake ring from Hong Kong. A very kind and good friend brought it back for me.

I loosen the jelly layer on top and then slowly push the cake up a bit from below. Then put it back on the board and using both hands lift the mould up and away from the cake.

Its a beautiful cake indeed! Didn't realize marshmallow can be used for cakes as well. I have eaten marshmallow jelly but not cakes. Is it possible to share your recipe?

Thank you, it would be nice to have a video to show how you remove the cake from the cake ring. I always failed to remove it nicely....and transfer to cake board.

Hi Lee Lee,
I tried your strawberry marshmallow recipe on Sunday nite. It was fantastic. I added a small piece of cream cheese inside when I noticed that the mixture was very watery as I was afraid that it would dissolved the biscuit base. Turned out to be perfectly ok :)
