I have lots of eggwhite leftover from making my pineapple tarts. Try to find ways to use them up asap. So here you have a eggwhite buttercake. Taste is nice but next time can reduce the amount of sugar. A bit too sweet for my taste.
YAI’S EGGWHITE BUTTER CAKE
Ingredients
250 gm cold eggwhite
170 gm caster sugar
2 tsp vanilla essence
175 gm cake flour (sifted)
25 gm milk powder
¾ tsp baking powder
175 gm soft unsalted butter
½ tsp salt
12 gm spongecake stabilizer
Method
Preheat the oven to 175°C.
Beat everything together until it is well mixed. (I whisked for about 8 mins on high). Bake until cake is cooked. I think roughly about 30 mins for my oven.

People! There is no need to throw away egg-whites. You can freeze them and use them much later on. What do you think restaurants do with such perishable assets?
anonymous we have been saving our eggwhites in the freezer since during CNY. Now it is just trying to find recipes using as much eggwhites as possible to get rid of the eggwhites. Heehee.

You can still use it. If you are going to keep it in the freezer, it can be kept for months. But after you have thawed it and left in the fridge you must try to use it up within a week or two. So you may want to keep them in small container and thaw a small container each time you need it.
