Japanese Cotton Spongecake

This spongecake is really really so soft like cotton. I sandwiched it with some buttercream and it taste delicious. Recipe for the cotton spongecake is here. Recipe for the buttercream is here.

Really looks so soft & evenly brown on top too! Is the recipe in your blog some where? If not, can you share the recipe? Would love to try other sponge cake recipe other than Castella. :P

Regina and Ching, the recipe is already in my blog under Cotton Spongecake. Actually this is a recipe from Alex Goh's book but I find his method not what I like so I change the method to what I would like to do. However, if you have his book and you would like to try his original method you can do so too.

I'll ever tried Alex Goh's Japanese Cotton Sponge Cake, not cottony at all, I think he still keeping some & didn't share it out. I think I'll try yours, can I know the size of the baking tray?

KC, the recipe is in my blog under Cotton Spongecake.

Hnonymous, I used exactly the same ingreds as state in Alex Goh's book except for the milk. INstead of evaporated milk, I used fresh milk. You can use either a swiss roll pan, like what I did here and cut it into half and spread with some buttercream and stack it up. Or you can use a 8 inch round or square baking tin.

hi Hugbear, i left a comment in the other post earlier. i realise my prob could be due to my shortened baking time. it was also rather wet.

can i check what brand of eggs do u normally buy for baking? are the eggs frm phoonhuat fresh?

Tracy, I agree that underbaking it will make the cake rather wet. I have had such experience before too. I don't know what brand of eggs I use because I usually buy by the tray from the wholesaler through my aunty. It is usually bigger and cheaper then if I buy from the market or supermarket.
