Baked Mooncake

I was making baked mooncake last night and also tonight. Usually the baked mooncake needs to be kept for at least 3 days before you consume it. It can be more than 3 days. Reason being the oil in the dough will be released and the mooncake will look very nice and glossy and also the skin will turn softer. If you eat it on the same day or the next day, the skin is still hard and dry. I have done the mooncake into many many different shapes. Some traditional shape and some untraditional shape. I really like the untraditional shape ones. It will be well received by the children. Intended to wrap them up to give to my colleagues' and friends' children. I am sure they will be very happy to receive them.

Oh ya, I was left with some balance dough and no more paste. So in order not to waste food, I shaped them into little piglets and managed to get four of them.

The piglets are handmade without mould and they are empty inside. Not enough paste.

I bought my cartoon character moulds through some spree organised by the forum that I joined. They are mostly from HK.

Dolphin, the recipe is shared under Traditional Mooncake already. The paste I got from Malaysia are not too sweet. You can also get the less sweet lotus paste from some shops in Singapore.

Dolphin, the definition of golden syrup is:

Golden syrup is made from sugar cane juice, which is evaporated to produce the flavor and texture of the syrup. Some call golden syrup nutty in flavor, and many praise its light yellow color. Often people feel it is sweeter than sugar. Using it as a sugar substitute should mean using a lesser amount.

Unlike the crystallized form of table sugar, golden syrup is primarily composed of sucrose, fructose, and glucose. This makes it easy to store without worrying that sudden cold temperatures in the house will cause hardness or crystallization of the syrup.

You can get the golden syrup in can or in bottle. Phoon Huat or other bakery supply shops sell them.

There are 2 mooncake recipes at your blog, can share which is more easy to handle n the taste differ for both? I have tried making baked mooncakes 2 times n failed. Want to try again but not sure which recipe to use. Thanks!

Pooh and Tigger cutters total weight is 38g. So you can use 20g paste and 18g skin.
