Bread

Made these last night for the boys and hubby. But office colleagues got to eat some of the bread too as I had too much at home. Used up all the coconut filling at last to make them into coconut buns. I know the boys won't want the coconut buns so I made some sausage buns for them.

I'm new here, I like your blog.
love these buns. I make a similar recipe and I use sausage and feta cheese mix for filling, but never tried coconut. They look delicious. I'm gonna try it soon.
But I couldn't find the ingredients for the coconut filling. Can u share it please ?

Hi Batool, you can either use the coconut filling recipe under Pandan Cake with coconut filling recipe or under Kueh Dadar recipe.

Thanks for the recipe. I didn't know this recipe was from Alex Goh's book. I bought it but left if at my home in Msia.

Anyway, I made the buns and it was very successful. The buns was gone once it come out from the oven. I gonna make another batch today.

HI,

Why is it my bread has a 'yeasty' smell after it is baked? Is yours like that? The bakery doesn't have those yeasty smell,, is it because it is over proofed?

Also the bread hardens quickly.

Hi Jen, of course you can link me. The bread I made don't have the yeasty taste. It smells great because of the butter used.

I am not sure if over proofing was the reason why the bread smell yeasty.

I also have National micro wave oven with convention bake. Need your advise, must we remove the round rotating glass plate? Or you use the baking tray on the centre rack for baking cakes & bread?

Hi Hugbear,

Can we use hand to knead the dough as I do not have the machine,have only small cake mixer with a pair of hooks. How come the more I knead the dough became more sticky, & how long should we knead?

I asked you to advise me whether must remove the round glass rotating plate from our micro-wave oven when baking cakes & buns? Also the rack should be at middle or below of the oven?

Hi Anonymous, you can use hand knead but it will be very sticky as the recipe calls for quite a fair bit of sugar. It will be easier and less messy if you use the heavy duty machine to do the work.

Yes, when using conventional baking you have to remove the glass plate.

Sorry, I just remember my National microwave oven has only 1 rack in the middle of the oven. So how to place on the lower rack? Thanks

I have been reading this blog for some time. Wanted to let you know that. I am a fan and enjoy your post. I see this bread it looks like it will be a fun and interesting bread. My mother makes coconut filling bread for diwali each year and everyone in our family loves it. I think I need to spend more time next time & follow your advice.

Just place it at the rack you have. Mine also I only have one rack. The uppper rack is impossible to use as it is too near to the heating element.
