Jonathan has been asking for kaya bread from Prima Deli. So instead of buying, I baked some for him to bring to school tomorrow. Since I don't have a lot of ingredients to make them into different types of buns, I turned some into ham and cheese bun with the remaining 4 pieces of ham I have in my fridge. The rest are just plain simple sugar and cheese sticks.

Hi Love all your bread! However, do you use hand or machine to knead? Have been using hand and it takes at least 45 mins or more and sometimes it didn't turn out well. Need your advise:>
I use my Kitchenaid to do the knead. Using hand will be too tiring for me. Hand knead and machine knead does make a big difference in the texture and the softness of the bread.

Hi May, welcome to my blog. You can find the sweet bread dough recipe in my blog under the Bread section. To make the kaya bun, just add some pandan paste to the dough to knead well for the colour to be well distributed. The rest of the steps will be the same.

hi - i love reading your blog. wonder how you do so many things! I was tempted to try the sweet bread dough but the quantity seems quite a lot. how many buns can you make from the recipe? can it be halved or frozen? thanks for your advice
Hi Wendy, you can always half the recipe. If you weigh each individual dough to be 60g, with half the recipe you should be able to get at least 8-10 pcs. However, you can freeze the unused dough (which has been proved once already) for later use. For freezing, you can divide the proof dough in small balls into plastic container (oil the container) and freeze it. When you are ready to bake the bread again, take it out of the freezer, thaw it, add in your fillings, let it proof until double the size, bake as per normal.

Hi hugbear, i finally found the courage to try your sweet bun recipe-excellent recipe and highly satisfying.i handkneaded for at least 35-40mins and nearly gave up but finally the dough came together!was able to get 10 buns with 1/2 the recipe.Thanks for the great recipe:)Lara
Hi there! I luv making bread but find it too time consuming (no bread machine) - can I leave the dough to proof overnight so that I can continue the rest of the process the next morning? Is there such thing as over-proving? Should I keep the dough in the fridge?Thanks, Missy
Yes you can let the dough proof in the fridge overnight. Yes, the dough if overproof, bread will taste a bit sourish.

Dearest hugbear, i tried the tangzhong water roux method in baking the bread but i found that your sweet bread dough recipe produced a much softer bread.just wondering if you have tried the tangzhong water roux method before?Thanks and have a good weekend!Lara
