Tried this salad once at 25 Degree cafe and love it so much that L and I had to try this out at home. I can say the dressing is pretty close and it is really yummy. However, I added some fried lotus for garnishing and used ham instead of prawns since I ran out of prawns.

hmm...looks delish the salad, how do you deep-fried the lotus root, any special preparation needed? TIA :)
I just sliced very thinly and deepfry. Make sure oil not too hot if not burnt will make the lotus taste very bitter.
