Fondant Cupcakes for a Full Month Celebration

My colleague celebrated his daughter's full month today and I was invited. I wanted to make some cupcakes for him as a gift which will be decorated with fondant. Beginning of the week, I started with making a batch of sugar paste. Then every night after work, I started making the toppers bit by bit and let them dry out. Thank God this whole week there was no rain except this afternoon. The toppers were all drying out very well.

I made the chocolate brownie cupcakes last night and this afternoon I did the chocolate ganache and also to do the assembly of the cupcakes. Anyway, I enjoyed making the toppers but I surely have lots of room for improvement.

Here are my fondant cupcakes. Thanks to my friend Glad, who is a very talented person when it comes to making fondant toppers and cakes. I took some of her ideas on the decoration of my cupcakes.

    Hi Hug Bear,

    Pls advise, are you using the tray provided by our mico-wave oven? My micro-wave oven has only one rack in the middle so when we bake buns & cakes using conventional bake, should we place our baking tray on the middle rack? Thanks

  12. Sometimes I do put the rack, esp when I am baking a square or rectangle shape pan. If I am using round shape, I don't put the rack in. I just place it on the metal at the bottom of the oven which turns during baking. The metal round thing at the bottom of the oven is there even when I use the microwave function, except that I will put the glass plate on top of the metal piece.

    Thanks for your advise. You mean the rack in the middle of our oven? For round cake tin, if my tin is smaller than the round metal roller how? What about when baking buns? Thanks

  18. May, you can either buy those edible writing pen to draw on the fondant or you can use a toothpick and dip it into colour paste and write on the fondant.

    hi hugbear, i am wondering how u stick the sugarpaste onto the cupcake/cake? And do u have a specific recipe for the icing and chocolate ganache? thanks and sorry 4 asking so many questions in one go.

  20. You can either use a brush with some water to help 'glue' the sugar paste together. Or you can just take a small piece of white sugar paste and dissolve it with a little bit of water to act as your 'glue'. The chocolate ganache recipe is posted together with the Steamed Moist Chocolate Cake. What kind of icing are you look for. If you are talking about sugar paste is it on my blog already.

    I followed your recipe for the banana cake.
    When I sliced my banana cake, bits fallen off & pcs broken. Where go wrong? Btw how many minutes must we beat butter & sugar till light & creamy & at what speed of our kitchen-aid. Pls advisem will be trying again. Thanks

  22. Anonymous, sounds like not enough liquid. BTW, how much banana did you add and are they really ripe? If you are using KA, beat at speed 6 or 7 for about 3 to 4 mins.
