Celebrating Chinese New Year here in Singapore

Chinese New Year is just around the corner. In fact tomorrow will be the day where most families will gather together to have their reunion dinner. It is the same for my family. In fact, I just had a reunion dinner for my own parents and brother and sister-in-law tonight. Tomorrow night will be cooking for my hubby's family.

Usually I baked almost all my own Chinese New Year Cookies except for a few items. Sharing with you what kind of cookies I have done so far for myself and relatives.

Pineapple Tarts (a very important item that you must have during CNY)

Kueh Bangkit (one of my favourites)

Almond Cookies (this year I tried a different recipe from the usual one that I did last year)

Cashew Nut Cookies (a new item this year)

Peanut Cookies (I do this every year)

    Hi hugbear..
I did a batch of open pineapple tarts and I just want to know how did you make the little tiny flowers on the tarts? I've seen other use stars and I have no idea how did you people manage to do this. Cant be cookie cutter right?

  11. Hi Lizziebeh, I used a plunger that I used for sugarcraft to cut out the tiny flower to put on top of my pineapple tarts.

    Hi Baking Mum!

    Gong Xi Fa Cai!
I tried baking Pineapple tarts this year, my 1st attempt.. they turned out not too bad but i still think there're losta room for improvements! was hoping to find your recipe.. hee..

Do you think you can share some tips instead? My pastry turns out quite soft, so it doesn't look v nice when i cut w the tart cutter.. would you know why?

and i also wana know if you used the ripe or non-ripe pineapples?

    Cheers!
    Babylooney!

  17. You can try keeping the dough in the fridge for a few hours before you roll them out. Or else you can try making the close up type of p tarts instead. Usually this type of pastry is the melt in the mouth kind of texture for the tarts.
