Ching, canned lychee also cannot get. So sad lah, but nevermind, you can try with longan. Instead of using lychee essence, you use longan essence. If can't get canned longan, can use dried longan. But if using dried longan, soak in water for a while to soften it first.
LeeLee, I can get canned lychee and canned longan here, no fresh ones because it's out of season, only available during Summer. What I meant was I don't have canned lychee at home at the moment, only got the canned longan, will have to wait until I buy the canned lychee to try this muffins. Hehe...
